Banana Bread with Saffron

INGREDIENTS:

  • 3 ripe bananas
  • 3 eggs
  • 200 g ProPud Pudding Vanilla
  • 1 tsp ground vanilla
  • 1 tbsp honey or agave syrup
  • 2 dl almond flour
  • 2 dl oat flakes (ground into flour)
  • 2 pinches salt
  • 1 pinch saffron
  • 2 tsp baking powder
  • A few chopped walnuts/cashew nuts (optional)

INSTRUCTIONS:

Preheat the oven to 175 degrees. Beat the eggs. Mash 2.5 bananas (save one half to put on top) with the vanilla pudding, almond flour, oats (ground into flour), baking powder, ground vanilla, honey/agave syrup, nuts if desired, saffron and salt. Whisk for a while. Line a bread tin with baking paper and add the batter. Top with sliced banana and a little flake salt. Cook in the lower part of the oven for approx. 45 min.

Perfect with coffee or as a luxury breakfast!
