Fruit & nut bar with dates, coconut and cocoa

Ingredients:

  • 15 dates (fresh and pitted)
  • 1 dl NJIE Fruit Drink Apple & Pear
  • 4 tbsp cocoa
  • 0.5 dl coconut flakes (plus extra for garnish)
  • 1 tbsp chia seeds
  • 0.5 dl pumpkin seeds
  • 1 dl Brazil nuts

Instructions:

Make sure the dates are pitted and blend with the fruit drink and cocoa to a smooth batter.

Add the coconut flakes, pumpkin seeds and chia seeds.

Chop the nuts and add to the batter.

Blend it all together and sprinkle with coconut flakes.

Freeze for at least an hour.

Enjoy!

Tip: the longer they’re left to stand, the better.
