Cookie dough cake

SIMPLE RECIPE FOR COOKIE DOUGH CAKE THAT YOU DON’T NEED TO BAKE IN THE OVEN.

BASE

COOKIE FILLING

  • 1 dl cashew nuts (soaked for 4 hours)
  • 1 tbsp melted coconut oil
  • 1 pinch flake salt
  • 2 dl Cookies n’Cream
  • 1 tbsp cocoa nibs
  • 50 g sugar free chocolate

Instructions

BASE

Mix oat flakes, sunflower seeds, and almonds to fine flour using a food processor. Add dates and protein pudding and mix to a workable dough. Stir cocoa nibs into the dough and press the dough into a bread loaf pan lined with parchment paper. Place the pan in the freezer.

COOKIE FILLING

Mix cashew nuts and coconut oil for about 1 minute using a food processor. Add Cookies & Cream milkshake and a pinch of salt. Mix until a smooth batter. Pour the filling onto the base layer and sprinkle cocoa nibs over it. Leave to solidify in the freezer. Melt the chocolate and drizzle over the cake. Cut into pieces and keep in the freezer. Let thaw for about 5–10 minutes before serving.
